UK Bramling Cross .....Moderate alpha, Dual purpose hop which is particularly good for late additions and dry hopping. Distinctive spicy, blackcurrant and lemon/citrus flavours. (Alternative Hop Style = Goldings)

UK Challenger .....Moderate alpha, Dual purpose, Can be used earlier in the boil for bittering or later for aroma. Floral character, spice and sweet citrus flavours. Ideal for Bitter, Porters and Stouts. (Alternative Hop Style = Admiral)

UK First Gold ..... Medium alpha, this hop can be used all the way through, from the beginning of the boil to dry hopping. Floral, orange and spice aromas. Suitable for many varieties of beer. (Alternative Hop Style = Goldings)

UK Fuggles .....Low alpha, ideal for late additions. Mild grassy, slightly floral aroma. A classic for best bitters and stouts. (Alternative Hop Style = Tettnanger)

UK Goldings .....Low alpha, Traditional English aroma variety, smooth almost sweet, delicate and slightly spicy. These are the East Kent variety. A classic for best bitters. (Alternative Hop Style = First Gold and WGV)

UK Progress ..... Progress was originally introduced as a replacement for Fuggles and has very similar characteristics. Slightly sweeter and with a slightly softer bitterness it is an excellent dual purpose hop. Aromas include grassy, honey, mint and blackcurrant tones. Good for Porters, ESB and Bitters. (Alternative Hop Style = Fuggles and Goldings)

UK Target .....High alpha hop, mainly used for bittering. Intense spicy and citrus aromas. Popular for both bitters and lager. (Alternative Hop Style = Admiral and Fuggles)

Czech Saaz .....Low alpha, Ideal for late aroma hopping, Saaz hops have long been established as a high quality European aroma variety. Earthy, spicy hop aroma. Popular for lager. (Alternative Hop Style = Tettnanger)

Slovenian Styrian Bobek .....Low alpha, Ideal for late aroma hopping. This distinguished variety is well known throughout the world and although identical to Fuggles in many ways it does have its own distinctive characteristics. Aromas of pine, lemon and citrus. Popular for lager and pilsner but also good for bitters. (Alternative Hop Style = Fuggles)

German Hallertau Blanc .....High alpha. A relatively new hop, related to Cascade and bred to be used primarily in American style ales. The flavours also work well in lager type beers. Flavours of gooseberry and white grape, similar to Sauvignon Blanc. Aromas of Elderflower, Grapefruit and Lemongrass. (Alternative Hop Style = Nelson Sauvin)

German Northern Brewer..... Dual purpose but particularly good as an bittering hop. Herbal, earthy and mint aromas. Widely associated with Steam Beers such as Anchor Steam. (Alternative Hop Style = Chinook)

German Tettnanger ..... Low alpha, dual purpose hop. Ideal for bittering and for late aroma hopping. Floral, spicy hop aroma. Popular for lager and wheat beer. (Alternative Hop Style = Saaz)

US Amarillo..... Dual purpose but particularly good as an aroma hop. Aromas of lemon, grapefruit, melon and peach. Ideal for American Pale Ales, IPA and Golden Bitters. (Alternative Hop Style = Cascade or Centennial)

US Cascade .....Moderate alpha, Dual purpose, Can be used earlier in the boil for bittering or later for aroma. A pleasant, flowery aroma and spicy, citrus, grapefruit flavour. Ideal for American Pale Ales, IPA, Golden Bitters and Lager. (Alternative Hop Style = Centennial)

US Centennial .....Moderate-High Alpha. Dual purpose. Can be used as a bittering hop early in the boil or later in the boil for aroma and flavour, a brilliant dry hop. Think of this hop as a supercharged Cascade, a bit more of everything, A floral, citrus-like aroma with medium-high bittering value. Ideal for Pale Ale and IPA. (Alternative Hop Style = Cascade or Columbus)

US Chinook .....High Alpha, A good bittering hop with aromas that work well for late kettle additions too. Ideal for American style beers such as Pale Ale and India Pale ale, but extends itself well to darker beers including Porter, Stout, and Barley Wines. Aromas of pine, grapefruit and spice. (Alternative Hop Style = Columbus and Target)

US Citra .....High alpha, Dual purpose but particularly good for late hopping. Relatively new hop from the USA, great aromas of grapefruit, lime, melon, gooseberry and passionfruit. Great in American Pale Ale and IPA. (Alternative Hop Style = Galaxy or Cascade)

US Columbus .....High Alpha, A good bittering hop with aromas that work well for late kettle additions too. Intense herbal, earthy, resinous aromas. One of the '3C' hops, used with Centennial and Cascade, Sometimes referred to as CTZ (Columbus Tomahawk Zeus - all similar varieties of hop.) Ideal for American style beers such as Pale Ale and India Pale ale, but extends itself well to darker beers including Stout and stronger brews. (Alternative Hop Style = Chinook) 

US Mosaic .....New American high alpha variety bred from Simcoe and Nugget. Dual purpose hop, good for bittering or late hopping. Mosaic offers a blend of earthy, floral, tropical and fruity characteristics that work excellently in a variety of different beer styles. Particularly good for bold American style IPA. (Alternative Hop Style = A very unique hop so difficult to substitute with other varieties.)

US Simcoe .....High alpha. Dual purpose but particularly good for late hopping. Relatively new hop from the USA. Complex aromas of passionfruit, pine and berry. Great for American Pale Ale and IPA. (Alternative Hop Style = A very unique hop so difficult to substitute with other varieties)
New Zealand Nelson Sauvin .....Moderate alpha, Dual purpose but particularly good for late hopping. Relatively new, unique hop from New Zealand. Great aromas of gooseberry and passion fruit and a white wine character. Great in many varieties of beer, particularly New World Pale Ale's and single hop pale ale (Alternative Hop Style = Hallertau Blanc)
