Tony's Tips,

there is much information about the use of Lactic Acid in various industries from Medical to Industrial. Basically it is a safe and Natural Chemical Compound derived from vegetables, not milk as the name may suggest since its first extraction in 1780 by Carl Wilhelm Scheele, and is Hygroscopic, (not Hydroscopic that's seeing under deep water!) meaning the action of infiltrating and suspending the molecules of its carrier namely Water, Wine or Beer etc to give the resultant liquid an apparent smoothness or "Silk-like" quality. Careful how much is added though, no more than about 10ml per gallon for very appealing results. White wine fortified with an overdose of Lactic Acid to the level of Lyle's Golden Syrup, or beer thickened to create a substitute for Halford's axle grease is not widely sought after and best avoided!
