Malic acid exists naturally in Apples and Grapes and other fruit and living organisms. The name Malic derives from the Latin word for apple "Malum". Originally isolated from apples by Carl Wilhelm Scheele in 1785, Malic Acid contributes to the pleasantly Sour taste in fruit and provides a similarly attractive Tart taste to wine when used in the right quantity! It is used widely in food known as E296 The pre curser "E" is simply a synonym for "Chemical Component" and does not necessarily indicate "Artificial" as one might incorrectly assume. Some E numbers are good guys, just follow the usage guide: 10 grams per 4.5 litres, dissolved in a warmed (microwaved is ok) cup of the wine then added to the main vessel.
