How to make Hawthorn Gin
Top and tail the berries and place into a preserving jar, put a layer of sugar between Hawthorn Berries. Now fill the jar with low cost supermarket gin (there is no point in using expensive or characterful Gin, the lower the price the better for this purpose!). Seal the jar and give the jar a shake every every day and then once every few days for 4 -5 weeks.
Strain and filter into Balliihoo swing top Costalata Bottles and leave to mature for a further three months in room temperature.
